Chicken Street pioneered a unique concept: made-to-order cheese naan bread, customized to customer tastes. The brand is enjoying increasing success, with over 60 restaurants across France, Belgium, Morocco, and Algeria. Mickaël Allard explains his decision to implement Inpulse to help franchisees achieve their goals faster.
We chose Inpulse because it's the only inventory management software that provides this level of granularity: theoretical and actual material cost per product, and real-time margin tracking.

As explained by Sufyan Renucci, the founder, franchisee support is a major success factor for the brand: "The support we offer allows franchisees who don't come from the restaurant industry to open their first restaurant and even develop a network later on, becoming multi-franchisees or master franchisees."
To achieve this, Mickaël Allard, Operations Director, chose Inpulse to address the challenges of his supply chain management and network profitability strategy:
"We went from 17 restaurants to 35 in year 2, and 60 today. It's been an exceptional start to the year for Chicken Street; we've just passed a peak. We had anticipated well on headquarters support functions, and we needed to refine the tools for franchisees so they could quickly achieve their goals.
Our role is to transmit reliable information to the entire network. We need to know how to collect data and make it easily accessible so it can benefit others. We benchmark the network, comparing restaurants so that a new franchisee can refer to a similar restaurant and learn its best practices: average check, product mix, peak activity, etc. With Inpulse, we accelerate this information transfer: Inpulse helps place correct supplier orders to avoid stockouts and overstocking, and enables regular inventories, providing access to yield variances to improve franchisee margins." Mickaël Allard, Operations Director
"Since I took on my role as Operations Director at Chicken Street, I've been looking for the kind of tools we had at McDonald's to support restaurants in managing inventory and margins. The starting point was to quickly stop using Excel for inventories and margin calculations, which were error-prone and time-consuming. More importantly, it was impossible for us to extract the difference between theoretical and actual margins and understand the disparities per dish. We chose Inpulse because it's the only inventory management software that provides this level of granularity: theoretical and actual ingredient costs, per product."
"I also wanted to refine our action plans to improve raw material management, and for that, we need to analyze yield variances to understand and focus our energy in the right place. With Inpulse's loss reporting module, we can quantify and categorize losses, and implement measures based on the issues encountered in each restaurant. We can support the franchisee and share best practices from other establishments."
By the end of the year, Chicken Street aims to reach between 80 and 90 restaurants, with upcoming openings in Dakar and Dubai, among others, with the goal of exceeding 100 in 2024. Such a pace requires the ability to quickly onboard new franchisees:
"We tried implementing a tool that was difficult to configure, and after a few months, we decided to switch. When choosing a tool, it's important to prioritize two things: quick configuration and ergonomics. Franchisees need to want to use it and quickly understand its value. With Inpulse, setup is fast, the interface is easy to use, and it connects quickly to our tools to create a smart ecosystem."
At the heart of its onboarding strategy, Inpulse provides dedicated expert support during the 4-week solution implementation. This phase of data collection, platform configuration, and team training is crucial for the project's success.
