The Coffee-shop brand Coutume, a pioneer in specialty coffee in France, has built a solid reputation thanks to its specialized know-how. With an established presence of 15 addresses in Île-de-France, Coutume is taking a new step by opening up to franchising. Léa Merlande, CFO at Coutume, reveals her challenge of centralizing supply flows to optimize the profitability of the network.

The story of Coutume began in 2010 with its founder Tom Clark who has always been steeped in coffee culture from a country where it is very strong: Australia. Following a student stay in Paris, he decided to introduce specialty coffee to the French by creating a place for roasting and tasting. Coutume's DNA is based on expert sourcing of specialty coffees carefully selected from around the world, a gourmet menu developed with a pastry chef and a friendly and pleasant tasting area.
Since then, Coutume has developed 3 concepts - The flagship (brunch/lunch offer), The casual (pastries/sandwich), the kiosk (coffee only) - and has mastered the transmission of its expertise. Faced with the growing interest of the public, Coutume is launching a franchise to support regional multi-franchisees, as explained by Léa Merlande, administrative and financial director of the network:
“The 3 concepts are franchisable, because they make it possible to mesh the territory according to location opportunities. Franchisees can first launch the flagship store, then duplicate them in complementary areas with casual or kiosks with reduced surfaces. We have a goal of 4 openings per year in France and internationally. It takes between 6 and 7 months, the time to set up the concept and find the location for around thirty seats.”
To prepare for this new chapter, Léa Merlande has worked on the structuring of supply to streamline flows, analyze them and optimize the profitability of the network:
Coutume launched its 750 m² Workshops in early 2023 to house the cooking laboratory, roasting, logistics, training and showroom.
“We have thus set up an efficient production tool that guarantees the quality of our coffees and our recipes. With the launch of the workshops, 3 problems that we anticipated intensified. The difficulty in analyzing flows between the laboratory and our establishments: impossible to trace stock transfers for example. A lot of time wasted updating mercurials. And finally, the mistakes made on the orders. ”
