The very Frenchy Hot Dog, Monsieur Albert multiplies the openings in travel places by offering “French” recipes such as the Monsieur Jacques Chichi with his Tome de Savoie. After opening 10 addresses, Sébastien Dameno, co-founder of the brand, explains to us his challenges in order to accelerate the development of his network.

Sébastien Dameno discusses for us the crucial challenges facing a growing network and why Inpulse is necessary at this stage of development:

“Our objective within 3 years is to reach 60 to 70 restaurants, we will aim for international sales in 1 year. We will continue to develop in airports and train stations, in particular because we have a product that works extremely well in this universe thanks to its French-style hot dog positioning. We have just gone through an important transition phase, our network has 3 branches, 4 franchisees and 3 new franchisees who will open before the end of the year.

With 10 restaurants, we could no longer continue as we did, we reached a large number of supplier orders. We have chosen Inpulse because it is an expert solution to centralize orders, have an accurate vision of stock and margin in all our restaurants.”

Have an accurate view of stocks at the moment

“The more you gain weight, the more you need a specialized tool. Before, we worked with our accountant who checked the mercurials and I was in charge of negotiating with suppliers. It was no longer sustainable between the volume of orders and the update of mercurials, we decided to look for an expert multi-site solution and to structure ourselves, we will also take on a specialized buyer to negotiate and respond to our franchisees.

What I liked about Inpulse was the ability to facilitate inventories for teams and real-time access for in-depth inventory analysis. It is crucial for us to have an accurate vision of the stock at the moment, no matter how much we do inventories if we are not connected to the cash register to automatically decrement the stocks, it is useless.

With Inpulse, we centralize all supplier orders, we facilitate the updating of mercurial orders, we have the right level of stock...  And intelligent ordering with AI for franchisees who are not experienced is super interesting, it allows them to order easily and be fair from the first few months.”

Monitor the margin

Inpulse is our inventory and margin manager, if there is a problem somewhere, we will be alerted. Last year, bread, fries, cheeses and oil grew 100% and these are the biggest expenses for us.

When you have a lot more volume and you don't have a tool to monitor what's going on, you're potentially losing a lot of money and you don't know how much... Without a tool, it's impossible to know the real material cost. With Inpulse, everything is calculated and we also have the possibility of updating in relation to the price delivered because as much as we have blocked prices on many references, but this is not the case on ultra-fresh products for example. We're going to be more and more precise, we're going to save time and money.”
