Since 2014, the Nobi Nobi concept has been based on a premium positioning with dishes made from fresh produce and original and unusual recipes in France. Yakisoba noodles, breaded chicken, and sauces were made directly in restaurant kitchens. Their franchise development at the national level required a revisit of operational processes, as Benjamin Schmit testifies:
“In order to homogenize product quality and optimize manufacturing times in all restaurants, the choice was made to industrialize NobinObi noodles and chicken. We are a hybrid between homemade and blended: sauces, curries and ramen broth are homemade. Our pre-production system is particularly efficient and allows us to deliver our dishes in a very few minutes. At Nobi Nobi, we thus keep the promise of quality fast food. We have also optimized our recipes and revised our technical sheets to reduce the amount of waste. For example, we replaced the green salad that served as decoration with tart red cabbage, which is eaten and has an interesting association with Panko breaded chicken. ”
“The other central project is that of supplies.. On the one hand, we streamlined the number of suppliers by dividing it by 3 to ensure quality, national logistics, and better negotiation of purchases. On the other hand, as Nobi Nobi is a highly processed “branch” brand, we have reviewed everything for the integration of franchisees, by setting up a tool to centralize purchases and simplify supplier orders.”
“Since integrating Inpulse, we have been using sales forecasting, we have set up weekly inventories and a daily inventory on our most sensitive product: chicken. We have access to very precise data to analyze, we look daily to follow the differences. In particular, it allowed us to realize that our technical sheets did not take into account the loss of water in chicken during cooking.

By 2024, Nobi Nobi aims to reach 30 restaurants with 8 openings planned in the next 6 months. Such a pace requires being able to quickly onboard new franchisees, as Benjamin Schmit points out:
