“We have fewer stockouts and we were able to change our product mix by showcasing our high-ratio pizzas on our menu. We have put intelligence into our approach to promotions, we choose the right products for the promotions and we thus limit the impact of the increase in the prices of raw materials.

“Before, we were more carefree, we were not at a 2 or 3% margin, it has been so fine since 2019, that we need very precise inventory management. We cannot pass on price increases to the end customer, there are inevitable wage increases and fixed costs, there is little room for manoeuvre left, we no longer have a choice, we must react quickly.”

“When I worked on Excel, I didn't have a reliable theoretical margin, it's complicated to gather information from the various sales channels that are multiplying. And above all, there were months when we didn't have time at all to put the numbers together, so we could go a quarter without knowing our margin. “This reveals unusual losses on a restaurant, for example. But we also once had the case of a new pizza chef who did not put enough into the dishes, that too is important, if you are not generous enough, you lose in quality.
