Côté Sushi is a pre-production model, the trays are made before each service by the staff and they are displayed in the window. Given the cost of raw materials such as salmon, anticipating the references to be produced is a major challenge for this restaurant chain.

In my business, concretely today, we make 40 million euros in turnover. Since the implementation of Inpulse, namely over the past 18 months, we have seen an improvement in 2 margin points, which represents 800,000€, which is considerable. This allows us to consolidate our cash flow and to be more confident in our development.
Côté Sushi is a branch network, 80% of our openings are operated by the head office, especially in the provinces.
